Sumac is native to Iran, and today is cultivated in Sicily, Turkey and specific regions in the Middle East. The berries are harvested when the outer flesh is crimson. They are then dried in the sun and ground into a powder. It is the main ingredient in a Middle Eastern spice blend called za-atar, made with sesame seeds and thyme. Sumac has a delicious lemon-like tang and a slightly fruity taste and aroma.

 

Sumac is an antioxidant, full of immune-boosting vitamin C with its flavonoids and polyphenols; studies have shown that Sumac can neutralize the free radicals in our bodies that can create health problems such as heart disease and cancer. This antioxidant ability also assists with reducing the signs of aging.
