There are several hundred acacia species native to Australia, but the wattleseed of culinary use comes from a relatively small number of acacia trees.
 
Acacia grows in outback Australia where for centuries the Australian Aborigines have understood the nutritional benefits of wattleseed. They have used it roots, barks, and seeds for medicinal purposes. Wattleseed has a low glycemic index, high fiber, and protein with no caffeine, and is an alternative to coffee.
 
Gathering and preparing wattleseed for consumption is painstaking and labor-intensive but in the end, a pinch of this potent spice goes a long way.
 
Wattleseed has a rich, toasty aroma that is faintly like coffee. Its flavor has notes of roasted hazelnuts and coffee with hints of cacao. Wattleseed makes a fabulous caffeine-free beverage; it can flavor ice cream, cheesecake, cookies, biscuits, sauces, and bread. My favorite use of wattleseed is in a decadent crème brûlée.
